A Tasty Tuesday-Grilled Shrimp Skewers

It is no secret that we love to grill around here. We also love seafood, shrimp being one of our favorites. Yesterday I was out with the kiddos, and strolled through Barnes and Noble. I spied the April issue of Coastal Living in the magazine rack and just had to pick it up. You don't see Coastal Living this far inland very often, and I love it. I keep meaning to subscribe, but forget. I spent the late evening yesterday perusing the pages, lost in fantasies of a beach house with a porch swing, and falling asleep every night to the sound of the waves crash. I was pleased to find an entire section of the magazine devoted to shrimp recipes! I could not wait to try several of them, and this is the first one we decided to try. It was delicious! I made one slight modification, the recipe called for prosciutto, halved lengthwise, and I substituted bacon trimmed into long, narrow strips.

Honey Shrimp Skewers

Prep time 20min, chill 30min, grill 6min
1/2 cup soy sauce
1/3 cup honey
1/4 cup fresh lemon juice
3 tablespoons olive oil
2 garlic cloves, minced
1/4 teaspoon cracked black pepper
1/4 teaspoon dried crushed red pepper
12 slices (6oz) prosciutto, halved lengthwise (I used bacon)
1 pound (about 24) large shrimp
24 nectarine or pineapple wedges (we used nectarine)
Garnish: sliced chives, sesame seeds

1. Combine first 7 ingredients in a large bowl.

2. Wrap 1 piece of prosciutto (bacon) around each shrimp. Thread shrimp and nectarines alternately on 8 (8inch) skewers (double skewer them). Place skewers in a shallow dish; drizzle with 1/2 cup of the soy sauce mixture, turning to coat. Cover and refrigerate 30 minutes.

3. Preheat grill to medium-high head (350*-400*). Remove skewers from marinade; discard marinade. Grill skewers about 3 minutes on each side or until shrimp are opaque. Serve with remaining soy sauce mixture. Garnish if desired. Makes 4 servings.


My plate, I served with a tossed salad, grilled green onions, and warm bread and butter.

Give it a try, I assure you, it is some good eating!

Oh this looks divine. We grill at least 2-3 times a week in warm weather and this looks like something we must try.
